The College of Management and Tourism is the only educational institution in Bosnia and Herzegovina that offers a specialization in geotourism.
Students of this specialization, along with their professors, came up with the idea for the Geo Park project, leading to the concept of GeoFood. With the GeoFood idea, our students entered a national competition and emerged victorious. Now, our students are gearing up for the world competition in Madrid scheduled for December this year. The GeoFood project aims to connect local cuisine with the specific geological identity of Central Bosnia. Our team, driven by a passion for innovation in tourism, embarked on a special venture in Šipovo, specifically in the idyllic Homestead at the End of the World, not far from the source of the Pliva River.
The GeoFood Project aims to link local cuisine with the specific geological identity of Central Bosnia. The team recognized not only the geological wonders of this area but also the potential to reflect these natural beauties through authentic gastronomic experiences. In addition to making the Homestead at the End of the World the epicenter of this project, we plan to collaborate with local farmers, fishermen, and traditional food producers. The goal is to create a menu that reflects the geological formations, rivers, and mountains of this region. Visitors will have the opportunity not only to enjoy gastronomic delights but also to learn about the connection between food and the land. What makes this project particularly unique are our values. It is crucial to highlight the love, perseverance, and determination that characterize our team. Skillfully and confidently, we are moving towards our goals.
The Household at the End of the World prepares homemade processed meat for its visitors, whether it's fresh or dried meat. Skillful hands of chefs who prepare meals for visitors use this meat, ensuring that it is always fresh and safe. The fruits and vegetables served are from the household's garden. They are pesticide-free. The fruit is picked, cleaned, and prepared for use. Meanwhile, the vegetables are not only used for consumption but also for making preserves.
The bread, aside from being made with love, is crafted from flour that is entirely homemade and produced in the nearby watermill. This provides you with the opportunity to enjoy eating bread and warm flatbread, leavened bread, and a loaf made from wheat flour.
Made at the Homestead at the End of the World and an integral part of every sweet dish, you will have the opportunity to enjoy this unique jam as a spread for breakfast. It is so delicious and healthy that it will replace any store-bought option.
The fish used in the household and is an integral part of the meals due to its nutritional value is sourced from a local producer. The fish is prepared by frying and served with potatoes or rice.
Homemade juices at the Household at the End of the World are prepared in a completely special way, with the recipes specifying the method. The mere thought of homemade juices might lead us to believe they aren't tasty, but these, due to the abundance of fruit, are not only healthy but also delicious.
The eggs served and prepared for breakfast are homemade. Hens are located in the yard, along with the chicken coop itself. These hens lay a certain quantity of eggs, but if the situation arises where this quantity is not sufficient, there is a local producer of homemade eggs near the household, and eggs are procured from them.
In rural areas, cheeses are still produced in the old-fashioned way, and this process has not been forgotten. While at the household, you have the opportunity to enjoy the taste of cheeses sourced from producers, which are entirely healthy and natural.
What is special for both households and the location of Šipovo are the animals, especially horses. Almost every household in Šipovo owns horses and uses them as pack animals. Šipovo is surrounded by forests where each family owns its share of the woods. While certain animals like cows, sheep, and goats are raised for fresh meat, the dried meat is usually prepared in winter due to low temperatures. Also, the eggs available are from their own domestic chickens.
Whether spread on bread or served with cheese, ajvar is an essential part of winter preserves. It is made in the fall, and due to the ingredients used, ajvar is considered a special product in every country, including ours. Every year, the household at the end of the world prepares ajvar, and you can see how they do it in the recipes.
We are sure that in every place, winter preserves are made in a different way. However, one thing is inevitable—winter preserves are certainly found in everyone's home. It is a way to have fruits and vegetables throughout the year. Whether you prepare ajvar, pickles, juices, or jams, the method of pickling peppers and making colorful salad is found in the recipes.
